Generally, these types of buffets are larger and offer more selection. Other restaurants offer a buffet in addition to a full menu. This way they able to meet the needs of all customers.

There may be select times of the day that you want to offer a buffet. For example you may want to include it daily at lunch. However, for dinner customers will only be able to order off of the menu. Weekend buffets are a good option too if you generally get a high volume of customers during this period of time. Pay attention to the flow of your customers to the restaurant to help you decide.

Buffet restaurants can definitely help you to offer your customers a good selection of food. It also allows it to be readily available and your kitchen staff won't be under so much pressure. However, a buffet isn't going to work with some types of restaurants or even with the atmosphere you may want to go with.
